This Still Austin Single Barrel was bottled at 116-proof, boasting a mash bill of 70% non-GMO white corn, 25% rye, and 5% malted barley. 100% Texas grown. Handselected for its unique and highly-desirable characteristics, this barrel is genuinely one-of-a-kind. This spirit was made from 100% Texas-grown grains and distilled in a 50-foot column still, hand-built in Scotland. The bourbon is then aged for at least two years in casks crafted from sustainably grown American oak, perfectly charred to allow the spirits to move in and out of the wood.

We have picked something truly special for you in this barrel—it's one that came about because of a morning conversation, tasting and brainstorming session that led to a potential selection. The moment we tasted this barrel, it was a must-have because of its unique notes. From nose to finish, it offers something distinct from our first Still Austin pick while still being uniquely a Still Austin barrel. What makes this stand out is a finish that I have never really experienced before in whiskey, and to me really celebrates the virtues of Texas and the flavors of the region—it's the blend of poblano and finished mole flavors. Yes, it has some of your more traditional bourbon scents and flavors, but this finish is really fun, boasting with flavor without being spicy, and will make this barrel standout from your other Still Austin or larger bourbon buys.
To get specific, on the nose, you'll discover baking spices, leather, honey, chocolate. This will lead into an evolving array of flavors including vanilla, roasted nuts, dark chocolate, toasted oak, citrus. Then you get to that finish that beams with poblano pepper, pipe tobacco, cinnamon, sesame, leather, cacao. Once you have a sense of that pepper flavor, it seems to expand throughout your tasting experience with every sip. There is no doubt that the wide range of temperatures, especially multiple summers of Texas heat, have impacted this barrel and its resulting flavors.
